Alright.. It’s about time I jump on this Coconut Oil bandwagon. I am a little late to the party, but excited to learn more and substitute this in my cooking and baking.
I understand why its a new superfood after reading this article and learning that coconut oil has medicinal properties, wards off infection, boosts brain activity and burns fat while reducing hunger. Sounds good to me!
So, I started last night by replacing the butter my Trader Joes vanilla cake loaf called for with organic, virgin coconut oil. I definitely tasted the coconut, which isnt awesome for my coconut hating husband (I know.. not awesome. He also doesn’t like bananas. So strange lol). Maybe I used the wrong amount?
Does anyone currently swear by coconut oil?
