Avocado, Banana, Kefir & Almond Milk Pudding
A couple weeks ago I posted about starting to make healthier eating habits. I started out by trying to improve upon my daily breakfast. I remembered seeing an avocado pudding that Kourtney Kardashian made on one of the episodes of her show. I looked it up and decided to give it a whirl. It was SO good!
My version is a smooth pudding is made of avocado, banana, kefir and almond milk and it is SO healthy and yummy. It kept me full until lunch, which is not typical. I had it all week and then decided to find out more about each ingredient. I cannot believe how healthy it is! I am even more in love with this pudding after finding out what a powerhouse mix of super-foods it is. I have included my version of the recipe below and I highly recommend the articles above and urge you to take a moment to read through them.
1/2 avocado (organic whenever possible) *(use brown/ripe bananas when possible as they are 8x more effective in boosting the body’s immune system than a fresh)
1 banana (organic whenever possible)
1/4 cup vanilla almond milk *(try to find organic without carrageenan in it – like the 365 brand at Whole Foods)
1/2 cup organic vanilla kefir (I used the Wallaby brand I found at Whole Foods)
